INGREDIENTS:**
g Beef, mince, raw
g Mushrooms, white, raw
g Spring onions, bulbs and tops, raw
ml Tesco Italian Chopped Tomatoes (HCP added*)
g Gia Sundried Tomatoe Paste (HCP added*)
g Oil, olive
g Aubergine, raw
g Oil, olive
g Eggs, chicken, whole, raw
g Cheese, cream, Philadelphia
g Asda extra thick fresh double cream (HCP added*)
g KetoCal 4:1 Powder (Unflavoured)
g ASDA Grated Mozzarella Cheese (HCP added*)
Directions:
1. fry the mince beef, sliced mushrooms and spring onions until the mice is browned add the tomato and gia paste stir to combine together season with salt and pepper,
2. slice the aubergines, and brush in the olive oil on both sides fry until soft over a med/low heat.
3. in a jug mix the egg, cream cheese, cream, and ketocal powder season with salt and pepper
4. in a baking dish place half the mince beef mixture followed by half of the aubergines, then the other half of the mince beef mixture and top with the aubergines.
5. pour over the egg and cheese mixture to cover the top
6 sprinkle with the mozzarella cheese.
7. bake in a 180oc oven for 25/25 mins until the top has set and is golden brown.
