keto tomato relish

INGREDIENTS:**
 g Tomatoes, cherry, raw
 g Onions, raw
 g Gia Sundried Tomatoe Paste (HCP added*)
 g Garlic Puree (GIA) (HCP added*)
 g Lemon juice, fresh
 ml MCT Oil
 g Olives, green, in brine, drained, flesh and skin
 g Basil, dried, ground

Directions:

1 chop the tomatoes, olives and onions 
2 in a small pan add the MCT oil and heat over med/low head add the chopped veg and fry for 10 minutes until soft and tomatoes have broken down
3 add the lemon juice, garlic, tomato puree, basil and season with salt and pepper 
4 store in a jar in the fridge until needed
