almond meringues

INGREDIENTS:**
g Eggs, chicken, white, raw
g hoosiel hill farm icing sweetener
g Almonds, flaked and ground
g hoosiel hill farm icing sweetener
g Butter, unsalted
g KetoCal 4:1 Powder (Vanilla)
g hoosiel hill farm icing sweetener
g Chocolate dark - Green and Blacks 85%
Directions:
1 in a clean grease free bowl add the egg whites and whisk until soft peaks then add slowly the 40g of icing sweetener until you have firm peaks
2 now sift in the ground almonds and the 20g of icing sweetener ( at this stage you can add food colour to the mixture to change) fold in the mixture using a metal spoon until fully combined
3 place the mixture in a piping bag and pipe onto a lined baking tray small discs (or you can spoon onto the tray) place in a 100oc oven for 25 minutes then turn off the oven and leave in to fully cooled
4 in a small bowl melt the chocolate and allow to cool slightly then mix in the butter, ketocal and 25g of icing sweetener until smooth to make a butter cream
5 pipe or spoon small amount of the butter cream onto one of the cookies then sandwich with another cookie
6 place in a air tight tin until needed or you can freeze the cookies until needed
great for lunch boxes, party's, Easter, Christmas, or snacks
