Bolognaise Sauce with courgetti and fruit dessert - LM

INGREDIENTS:**
 g Courgette, raw
 ml Aldi double cream (HCP added*)
 g Blueberries
 g Onions, raw
 g Aubergine, raw
 g Mushrooms, white, raw
 g Oil, olive
 g Beef, mince, raw
 g Tomatoes, canned, whole contents
 g Tomato puree
 g Cream, fresh, double, including Jersey cream

Directions:



Heat oil in a pan, add spring onion, aubergine and mushrooms and fry until soft.
Add minced beef to pan , breaking up into fine pieces. Cook until browned.
Add tomatoes and tomato puree + seasoning and cook over a slow heat.


Spiralise the courgette and add to a microwave-safe bowl with plenty of salt and pepper. Cover with cling film, poke a few holes in the top and microwave for 2–3 minutes.
Serve with the bologanise.


Double cream and blueberries for dessert.


*Recipe can be altered to use lo carb pasta, instead of courgetti if preferred*
