lemon posset

INGREDIENTS:**
 g Lemon juice, fresh
 g KetoCal 4:1 Powder (Vanilla)
 g Cream, fresh, double, including Jersey cream
 g Lemon peel
 g hoosiel hill farm icing sweetener
 ml Vanilla extract, sugar free (HCP added*)
 g Raspberries, raw
 g Blueberries

Directions:

1 zest the lemon into a small sauce pan then add the cream, ketocal, and sweetener place on a low heat and simmer for 2 minutes
2 juice the lemon and add to the pan with the vanilla extract whisk for 1 minute 
3  into a small bowl or jar add the lemon cream mixture, place in the fridge to chill and set
4 to serve add the fresh fruit on top.
