rhubarb and blueberry fool

INGREDIENTS:**
 g Rhubarb, stems only, raw
 g Orange juice, freshly squeezed
 g hoosiel hill farm icing sweetener
 ml Vanilla extract, sugar free (HCP added*)
 g Cream, fresh, double, including Jersey cream
 g KetoCal 4:1 Powder (Vanilla)
 g Ginger, fresh
 g Blueberries

Directions:

1 chop the rhubarb into small pieces and place in a pan with the orange juice and grated fresh ginger and sweetener simmer until the fruit is soft and tender allow to cool
2 in a bowl whisk the cream, ketocal, vanilla until softly whipped 
3 fold in the cooled stewed rhubarb and blueberries chill until cold
