2.2:1 omelette - JO 4/1/24

INGREDIENTS:**
 g Onions, raw
 g Eggs, chicken, whole, raw
 g Oil, olive
 g Garlic Puree (GIA) (HCP added*)
 g Peppers, capsicum, chilli, red, raw
 g Sweetcorn, baby, fresh and frozen, boiled in unsalted water
 g Tomatoes, cherry, raw
 ml Elmlea, double cream, 100% plant (HCP added*)
 g KetoCal 3:1 Powder
 g Ham

Directions:

Beat eggs and measure out the right amount
Whisk the cream, garlic puree, ketocal and salt and pepper into the egg
Add half the oil to the frying pan, add sweetcorn, pepper and tomato. Fry until soft, remove from pan and set aside
Add remaining oil to the frying pan, add the egg mixture and fry to form an omelette.
Once lightly set, add the fried vegetables and chopped ham to one side of the omelette and fold over to serve
