2:1 scrambled eggs -RL 18/10/23

INGREDIENTS:**
 g Spinach, baby, raw
 g Eggs, chicken, whole, raw
 g Apples, eating, raw, flesh and skin
 g Butter, unsalted
 g Oil, olive
 g Maxijul super soluble (HCP added*)

Directions:

  1. crack open 1 large egg and whisk the egg to combine the yolk and egg white evenly.
  2. Weigh out the whisked egg into a bowl
  3. Weigh out the spinach and chop it
  4. Add the double cream, Maxijul and spinach to the egg and whisk
  5. Put the butter and the oil in the frying pan and put on medium heat. 
  6. Pour in the egg mixture to the frying pan, mix to scramble on a low heat so the scrambled eggs become soft and not dry
  7. Steam apple until soft (or leave it raw if palatable)
  8. serve scrambled egg (making sure to scrape all the oil from the pan) with apple to the side
