2:1 scrambled eggs -RL 18/10/23

INGREDIENTS:**
g Spinach, baby, raw
g Eggs, chicken, whole, raw
g Apples, eating, raw, flesh and skin
g Butter, unsalted
g Oil, olive
g Maxijul super soluble (HCP added*)
Directions:
- crack open 1 large egg and whisk the egg to combine the yolk and egg white evenly.
- Weigh out the whisked egg into a bowl
- Weigh out the spinach and chop it
- Add the double cream, Maxijul and spinach to the egg and whisk
- Put the butter and the oil in the frying pan and put on medium heat.
- Pour in the egg mixture to the frying pan, mix to scramble on a low heat so the scrambled eggs become soft and not dry
- Steam apple until soft (or leave it raw if palatable)
- serve scrambled egg (making sure to scrape all the oil from the pan) with apple to the side
