Celeriac Slaw with Cheesy Avocado Chicken

INGREDIENTS:**
 g Celeriac, raw
 g Carrots, old, raw
 g Cabbage, average, raw
 ml Mayonnaise Hellmanns Full Fat (HCP added*)
 g Chicken, breast, grilled without skin, meat only
 g Avocado, average, flesh only
 g Oil, olive
 g Cheese, Mozzarella, fresh

Directions:

Thinly slice the white cabbage, grate the carrot and celeriac and then weight it to make sure the weights are correct when grated, or if you prefer put cabbage, carrot and celeriac through a blender. Then mix it all together in a bowl with the mayonnaise and half the oil. Put the other half of the oil in a pan, slice the chicken breast into small pieces and place in the pan to cook. When cooked through just before removing from pan add cheese to pan to melt with cooked chicken. Set aside when all cheese is melted. Mash avocado with fork and mix with the chicken and melted cheese. Serve with the slaw.
