3:1 tofu curry - MB 9/11/23

INGREDIENTS:**
 g Cauldron Authentic Tofu (HCP added*)
 g Curry powder
 g Spinach, baby, raw
 g Onions, raw
 g Tomatoes, canned, whole contents
 ml coconut milk (canned) (HCP added*)
 g Oil, olive
 ml Calogen Neutral

Directions:

finely chop onions
Finely chop tofu (or chop them as small as Marnie can handle)
Finely chop spinach

Heat oil in a pan


Add onions and fry till soft, add tomato puree and curry powder and cook for 5 minutes on low/medium. 
Add finely chopped spinach and tofu and cook for a further 3 minutes.
Add coconut milk and calogen and turn off heat
Scrape all contents from the pan onto the plate
Serve
