INGREDIENTS:**
ml alpro coconut milk no sugars long life (HCP added*)
g Eggs, chicken, yolk, raw
g Sweetener, Truvia (HCP added*)
ml Vanilla extract, sugar free (HCP added*)
g Gelatine
g Cream, fresh, double, including Jersey cream
Directions:
1. Warm the milk on medium-low until it begins to simmer.
2. Sprinkle gelatin over 2 tablespoons of cold water in a small bowl and set aside to soften.
3. Beat the egg yolks and sweetener until light in color, then mix in the vanilla.
4. Gradually add the egg yolk mixture to the hot milk, whisking constantly. Return to the pan and heat gently, stirring with a wooden spoon until the custard thickens enough to coat the back of the spoon—drawing your finger across should leave a clear line. Stir in the gelatin until dissolved. Transfer to a bowl, cover with damp scrunched-up baking paper to prevent a skin, and cool.
5. Once cooled and set, beat in the double cream until the mixture is smooth.
