Beef stroganoff SC 2.1-Copy

INGREDIENTS:**
 g Tomatoes, standard, raw
 g Mushrooms, common, raw (HCP added*)
 g Courgette, raw
 g Pepper, capsicum, red, raw
 g Onions, raw
 g Oil, olive
 g Beef mince 15% fat (HCP added*)
 g Tomato puree
 g Sour Cream (Avonmore) (HCP added*)
 g Potatoes, old, boiled in unsalted water, flesh only

Directions:

Slice tomato, mushroom, courgette, peppers, and onion. 
Gently heat oil on medium sized pan. Add vegetables and slwoly cook until vegetables are soft and oil is mostly absorbed. 
Add mince to the pan to cook, covered until meat and vegetables are tender. 
Stir in tomato paste and simmer for 5-10 minutes
