4:1 courgette puree - CC

INGREDIENTS:**
g Chicken, dark meat, raw
ml Cream, double, Tesco (HCP added*)
g Courgette, raw
g Mushrooms, white, raw
g Carrots, old, boiled in unsalted water
g Oil, olive
g Potatoes, old, boiled in unsalted water, flesh only
Directions:
Boil potatoes and carrots and weigh out
Add oil to a pan, add a pinch of fennel seeds along with chopped chicken, courgette and mushrooms
Stir fry until chicken is cooked through and courgette is tender
scrape all ingredients into a blender along with any remaining oil from the pan. Add in cream, potato and carrot
Blend, adding water if needed to reach the desired consistency
