2:1 cauliflower and courgette fritters - RL 29/4/24

INGREDIENTS:**
 g Cauliflower, raw
 g Courgette, raw
 g Cheese, Cheddar, English
 g Hellman's Real Mayonnaise (HCP added*)
 g Flour, wheat, white, plain, soft
 g Mixed herbs, dried
 g Oil, olive

Directions:

Boil cauliflower till it still has a bite to it, let dry and then pulse in a food processor till it looks like rice or crumbs
Grate courgette, put in a muslin cloth and squeeze as much water out (can be squeezed by hand as well)
Add both ingredients to a bowl along with the cheese, a pinch of mixed herbs and flour
Combine well
Add oil to a pan and when hot, cook the batter a tablespoon at a time for 2-3 minutes per side
Serve on a plate. 
Add any remaining oil from the pan into the mayo, mix and serve on the side
