Blueberry muffin

INGREDIENTS:**
g Eggs, chicken, whole, raw
g Oil, olive
g Coconut cream
g Peanut butter, smooth
g Almonds, flaked and ground
g Blueberries
ml Sainsbury's Double Cream (HCP added*)
Directions:
Oven 170c
Egg, oil, coconut cream, nut butter in bowl and whisk for 3 mins
Fold in ground almonds
Place blueberries in cases
Add muffin mixture
Bake for 15-20 mins
Batch cook and freeze
Half a muffin provides: 10.8g fat, 2g protein, 1.5g CHO
HALF A MUFFIN CAN BE GIVEN AS A SNACK
