Chicken coconut curry RA 2:1

INGREDIENTS:**
g Oil, olive
g Chicken breast, raw (HCP added*)
g Peppers, capsicum, green, raw
g Onions, raw
g Tomato puree
g Garlic puree
g Tomatoes, canned, whole contents
g Curry powder
g Water, distilled
g Double cream, extra thick, Tesco (HCP added*)
g Coconut milk
g Butter, spreadable (75-80% fat)
g Potatoes, old, baked, flesh and skin
g Slim Rice Original (HCP added*)
Directions:
- Place oil in saucepan and heat, add chicken, mushroom, pepper, tomato puree, spring onion and garlic puree and cook on medium heat for 10 mins.
- Add chopped tomatoes, curry powder and water, cook for further 10 mins on low heat.
- Ensure all chicken cooked through thoroughly
- Option to serve with a side of slim rice
