Chicken coconut curry RA 2:1

INGREDIENTS:**
 g Oil, olive
 g Chicken breast, raw (HCP added*)
 g Peppers, capsicum, green, raw
 g Onions, raw
 g Tomato puree
 g Garlic puree
 g Tomatoes, canned, whole contents
 g Curry powder
 g Water, distilled
 g Double cream, extra thick, Tesco (HCP added*)
 g Coconut milk
 g Butter, spreadable (75-80% fat)
 g Potatoes, old, baked, flesh and skin
 g Slim Rice Original (HCP added*)

Directions:

  1. Place oil in saucepan and heat, add chicken, mushroom, pepper, tomato puree, spring onion and garlic puree and cook on medium heat for 10 mins.
  2. Add chopped tomatoes, curry powder and water, cook for further 10 mins on low heat.
  3. Ensure all chicken cooked through thoroughly
  4. Option to serve with a side of slim rice
