Lentils with Vegetables 2.1 RA

INGREDIENTS:**
 g Lentils, red, split, dried, boiled in unsalted water
 g Garlic puree
 g Tomato puree
 g Celeriac, boiled in unsalted water
 g Oil, olive
 g Butter, unsalted
 g Onions, raw
 g Peas, raw

Directions:


1.Chop your celeriac into small cubes and place in a pan. Cover the celeriac with water and add a sprinkle of salt. Boil for 10-15 minutes until the celeriac becomes soft and easy to mash
2. In a seperate pan fry onions and once goldren, mix lentils, garlic puree, tomato puree and peas together.
2.Mash celeriac with olive oil and butter and mix together.
3.Top with parmesan and serve with a side of cold sliced cucumber
