Taco Cups

INGREDIENTS:**
g Tortilla chips fried in sunflower oil
g Lettuce, average, raw
g Avocado, average, flesh only
g Cheese, Parmesan, fresh
g Beef, mince, raw
g Oil, olive
g Cream, soured, fresh
g Tomatoes, cherry, raw
Directions:
1. Preheat the oven to 200 C (390 F).
2. In a medium frying pan, heat the olive oil. Add the beef mince with a pinch of salt, and pepper until brown.
3. Meanwhile, line a baking tray with parchment paper. Place two or three equal portions of the grated Parmesan cheese onto the baking tray into round flat circles, about 13 cm (5-inch) in diameter.
4. Bake for 5-7 minutes or until the Parmesan cheese melts and turns slightly golden around the edges. Remove from the oven. Using a flat spatula, move each cheese disc into a well of a cupcake tray. Pinch the sides together in one section to form a cup. Let the cheese cool down and solidify.
5. Once the mince is cooked, spoon into the cheese taco cups. Finish with a dollop of sour cream, chopped tomatoes and mashed avocado. Crumble the trotilla chips up and then sprinkle on top of the taco shells.
