SNACK - Pecan Mince Pie

INGREDIENTS:**
 g Sweetener, Truvia (HCP added*)
 g Ground almonds, Tesco (HCP added*)
 g Butter, salted
 g Eggs, chicken, whole, raw
 ml KetoCal 4:1 LQ (Unflavoured)
 g Cinnamon, ground
 g Pecan nuts, kernel only
 g Butter, unsalted
 g Peel, mixed
 g Sultanas

Directions:

Method
1. In a bowl mix almonds with 13g of melted butter to form a pastry. Allow to chill in fridge for 10 mins. 2. Press chilled pastry into a tart tin.
3. Chop pecans, mixed peel and sultanas and place into the tart case.
4. Melt 6g of butter, add the Ketocal LQ, cinnamon, sweetener and egg.
5. Whisk together and pour into tart case.
6. Bake at 160c for 12-15 minutes until tart has set and edges of pastry are golden brown.
7. Allow to cool in tin. Remove from tart case and serve.
Top Tip - Can be frozen for up to 3 months until needed.
