Quiche

INGREDIENTS:**
ml MCT Oil
g Flour, wheat, white, self raising
g Tomato, peeled (HCP added*)
g Mushrooms, white, raw
g Creme fraiche, full fat
g Eggs, chicken, whole, raw
g Ham
g Cheese, Cheddar, English
Directions:
- Preheat oven to 180C/ fan 160C/ gas mark 4.
- Mix together flour, MCT oil, and a pinch of salt, leave the rest in the fridge for approximatetly 10 mins.
- Line 9cm flan case with pastry, pressing with fingers, prick base, line with foil and fill with baking beans/rice, cook in the oven for 8 mins, remove foil and reduce oven to 160C/ fan 150C/ gas mark 4 and cook for a further 3 mins.
- Fry tomato in remaining oil with mushroom and herbs.
- Beat together creme fraiche and eggs, season and add ham, pour mixture into flan case.
- Top with cheese and cook in oven for approximately 15 mins until set.
