Chinese style salad - Matthew's Friends

INGREDIENTS:**
g Peppers, capsicum, green, raw
g Carrots, old, raw
g Celery, raw
g Beansprouts, mung, raw
g Soy sauce, light and dark varieties
g Oil, sesame
g Chicken, dark meat, roasted
g Oil, peanut (groundnut)
g Cashew nuts, kernel only, roasted and salted
g Cucumber, raw, flesh and skin
g Lemon juice, fresh
Directions:
1) Start by making noodles with the cucumber, carrot and celery. This can be done by using a spiraliser or a veg peeler.
2) Heat the groundnut oil and cook the beansprouts then leave to go cold. If you have been able to find ready to eat beansprouts then all you need to do is toss them in oil.
3) Slice the green pepper as fine as you can.
4) Add the vegetable noodles to the beansprouts with the green pepper.
5) Shred the chicken and mix into the vegetables.
6) In a small bowl mix the soy sauce, sesame oil, lemon juice and a drop of sweetener if desired.
7) Sprinkle the cashews over the salad and serve with the dressing.
8) For more flavour add a pinch of Chinese 5 Spice to the dressing.
