INGREDIENTS:**
g Cucumber, raw, flesh and skin
g Eggs, chicken, whole, raw
g Mushrooms, white, raw
g Spring onions, bulbs and tops, raw
g Tomatoes, cherry, raw
g Beef, mince, raw
ml Alpro Soya Light milk (HCP added*)
g Carrots, old, raw
g Coconut, desiccated
g Oil, sunflower
g Cream, fresh, double, including Jersey cream
g Flaxseed, Linwoods (HCP added*)
g Curry powder
g Turmeric, ground
g Pepper, black
g Bay leaf, dried
Directions:
Reserve the tomato and cucumber. Chop the mushrooms and spring onions, grate the carrot. Gently fry the onions with the curry powder and turmeric, add the mince and mushrooms and fry for a few minutes. Add flaxseeds, bay leaf, carrot and desiccated coconut. Place in an oven proof dish and bake in a pre-heated oven 170c/Fan 150c/Gas 4/5. Cook for 15 minutes. Mix the egg with the black pepper, soya milk and cream together. Pour on top of the mince mix and then return to the oven and bake until the custard is set and golden. Serve with tomato and cucumber on the side.
