Cajun Salmon - Matthew's Friends

 g Celeriac, raw
 g Salmon, farmed, flesh only, raw
 g Oil, sunflower
 g Mushrooms, white, raw
 g Pepper, capsicum, red, raw
 g Spinach, baby, raw
 g Spring onions, bulbs and tops, raw
 g Butter, unsalted
 g Lettuce, average, raw
 g Tomatoes, cherry, raw
 g Schwartz Cajun Seasoning (HCP added*)


Peel the celeriac before weighing then cut into chips. Chop the spring onions, red pepper, mushrooms and spinach. Season the chips and the salmon by rubbing with the cajun spice. Heat the oil and fry the chips until cooked and then cook the salmon in the same pan. Set the chips and salmon to one side to keep warm. Add the butter to the pan and fry the red pepper, spring onions and mushrooms and cook for 2 or 3 minutes then add the spinach and stir until wilted. Serve with the salmon and chips and a salad made from the lettuce and tomato on the side.
