Sticky Chicken - Matthew's Friends

INGREDIENTS:**
 g Spinach, baby, raw
 g Carrots, old, raw
 g Cauliflower, raw
 g Chicken breast, raw (HCP added*)
 g Oil, peanut (groundnut)
 g Pepper, capsicum, red, raw
 g Spring onions, bulbs and tops, raw
 g Sweetcorn, baby, fresh and frozen, boiled in unsalted water
 g Mushrooms, white, raw
 g Whole earth mixed seed peanut butter (HCP added*)
 g Chinese 5 spice
 g Amoy Light Soy sauce (HCP added*)
 g Garlic Puree (GIA) (HCP added*)
 g Cola, diet

Directions:

Marinate the chicken in Chinese 5 spice powder and low sugar soy sauce for at least 10 minutes. Chop the mushrooms, onions and spinach. Slice the carrots, pepper and sweet corn into thin slices. Heat 11g of the oil in a small pan and fry the chicken briefly then cover with some diet cola and simmer until the cola has reduced right down to a syrupy consistency. To make rice grate the cauliflower. Fry the cauliflower in a little of the oil. Stir fry all the vegetables in the remaining oil with the Gia garlic paste and peanut butter. Serve with the chicken sliced and drizzled with the cola residue.
