Pizza - Matthew's Friends

INGREDIENTS:**
 g Cream, fresh, double, including Jersey cream
 g Eggs, chicken, whole, raw
 g ASDA Grated Mozzarella Cheese (HCP added*)
 g Mushrooms, white, raw
 g Oil, olive
 g Spring onions, bulbs and tops, raw
 g Tomatoes, cherry, raw
 g Salami
 g Ground almonds, Tesco (HCP added*)
 g Cheese, cheddar (HCP added*)
 g Olives, green, in brine, drained, flesh and skin
 g psyllium husk (HCP added*)
 g Mixed herbs, dried
 g Garlic Puree (GIA) (HCP added*)

Directions:

First make the pizza base. Pre-heat the oven to 190c/Fan 170c/Gas 5. Place the mozzarella in the microwave for 30 seconds for it to melt. Then mix in the beaten egg, cream, ground almonds and psyllium husk. Mix well to form a dough. Spread to a 5 or 6 inch round on a silicone mat or non stick baking tray and cook for approximately 10 minutes. Fry the chopped spring onion in the oil until tender but not brown. Add the garlic paste and tomatoes. Cook for a few minutes breaking the tomato down as much as possible. Spread tomato mixture on to the pizza base and sprinkle with herbs and some black pepper to season. Place the salami and sliced mushrooms on top of the tomato. Sprinkle with the grated cheddar cheese and olives. Cook in the oven for approximately 15 minutes.
