Mid morning snack - J. - Chia seed pudding with raspberries on the side

INGREDIENTS:**
 g Chia Seeds (Raw Health) (HCP added*)
 ml Liquigen
 ml coconut cream 250 ml carton Sainsburys (17/02/19) (HCP added*)
 g Water, distilled
 g Bananas, flesh only
 g Raspberries, raw
 g Strawberries, raw

Directions:


Mix the chia seeds, water, Liquigen and the coconut cream together in a small bowl and mix well - continue stirring the mixture for about 5 minutes and occasional stir up to 10 mintes to ensure the chia seeds do not clump together.  The chia seeds absorb fluid so they will increase in size.  Leave to soak overnight in the refridgerator.  In the morning - check that the consistency is ok - you might need to add some more water.  You can add the mashed banana in the morning or indeed add it at night when mixing the pudding. 

You can freeze bananas in small portions and can freeze the coconut cream as well.  The ingredients in this recipe can be multiplied by 3 to keep in the fridge for 3 days.  I have not tried freezing this recipe yet so not sure if it will freeze and defrost nicely!.
Serve with raspberries at the side or another fruit to make up 1 gram of carbs such as 18 g of  strawberry.
