Scotch Egg Lunch

INGREDIENTS:**
g Pork, mince, raw
g Almonds, flaked and ground
g Cheese, Parmesan, fresh
g Mayonnaise, standard, retail
g Eggs, chicken, whole, raw
g Cheese, Cheddar, English
g Celery, raw
g Ghee, butter
Directions:
Pre heat the oven then put the ghee on the baking tray and place in the oven to heat. .Eggs - You will need a small amount of raw egg to coat the sausage meat, I recommend around 3g for one egg. Boil another egg for 5 mins, set aside to cool. Place the ground almond/parmesan in a bowl and mix - season to taste. When the boiled egg has cooled, break it up and weigh to get the correct amount. Form into a ball then coat with the mince pork. Add the pork ball to the raw egg to coat, then roll in the almond mixture. Place onto the pre heated baking tray in the oven for around 20 mins on a medium heat. Serve with the cheddar, celery and mayonnaise.
