grilled aubgines

Description:
great for a side dish or as a vegetarian main course.
can be eaten hot or room temp, nice to cook on a BBQ in the summer,

Ingredients:
 g Aubergine, raw
 ml MCT Oil
 g Paprika
 g Rocket, raw
 g Cheese, Parmesan, fresh

Directions:


1 slice the aubergines into long thin strips about the thickness of a pound coin and place on a baking sheet.
2 in a bowl mix the MCT oil with the paprika and season with salt and pepper,
3 brush the oil mixture onto both sides of the aubergines and bake at 170oc for 20 minutes,
4 on a serving plate place the rocker add the baked aubergines, with a vegetable peeler shave over the parmesan cheese and serve.
