Christmas bubble and squeek

Description:
An easy main course using left over Christmas dinner.
Can make ahead and freeze until needed.
Ingredients:
g Celeriac, raw
g Brussels sprouts, boiled in unsalted water
g Lard
g Eggs, chicken, whole, fried, without fat
g KetoCal 3:1 Powder
Directions:
1. In a bowl, mash the cooked celeriac with a fork, season to taste with salt and pepper and add the Ketocal powder.
2. Chop the cooked sprouts and mix in the celeriac mixture, with wet hands form the mixture into a small potatoes cake shape.
3. In a frying pan, heat the lard over med/low heat once heated add the cake to the pan and fry for a few minutes on each side until golden and brown, it will make a squeaking noise as it cooks in the hot fat.
4. In the same pan crack the egg in and fry until cooked spooning over the excess lard to cook the yolk, (a runny yolk is best with the bubble and squeak).
5. With a fish knife lift out the bubble and squeak onto a plate and top with the fried egg.
