Description: great make ahead meal or snack great for party or lunch box 

Ingredients:
 g Eggs, chicken, whole, raw
 g Water, distilled
 g KetoCal 3:1 Powder
 g Slim Rice Original (HCP added*)
 g Oil, olive
 g Spring onions, bulbs and tops, raw
 g Spinach, baby, raw

Directions:

1 in a jug whisk the egg, ketocal powder and water together season to taste with salt and pepper
2 in a frying pan add half the oil and heat over med/low once hot add the egg mixture cook until set then flip over to set the other side
3 turn out onto a chopping board and allow to cool 
4 trim the sides of the omelet so you have a square, place the trimmings onto the omelet
5 mix the rest of the oil with the slim rice, chopped onions and spinach season to taste with salt and pepper
6 place the rice mixture over the omelet spreading so you have an even layer covering the omelet
7 roll up like a swiss roll and cut into slices you can use a cocktail stick to hold together 
8 keep in the fridge until needed
