Cream of tomato soup with bread and butter

Description: Tomato soup with courgettes and cream, served with low carb bread and butter.

Ingredients:
 ml Tesco Italian Chopped Tomatoes (HCP added*)
 g Double cream, extra thick, Tesco (HCP added*)
 g Oil, olive
 g Garlic, raw
 g Courgette, raw
 g Oregano, dried, ground
 g Celery, raw
 g Pepper, black
 g KetoCal 3:1 Powder
 g Seriously low carb loaf (HCP added*)
 g Butter, spreadable (75-80% fat)

Directions:

Heat oil in frying pan and cook finely chopped garlic, celery and courgette until slightly softened.  Add tin of tomatoes and break up with back of wooden spoon.  Add oregano, black pepper and salt to taste and approx 50ml of boiling water.  Simmer for 15 minutes or so until well cooked.  Add in cream and ketocal powder and cook over a low heat for approx 5 minutes longer.
Take pan of heat and blend soup with a stick blender. Serve with buttered seriously low carb bread.
