lime and mint posset

Description:
great dessert for summer BBQs and party's
Ingredients:
g Cream, fresh, double, including Jersey cream
ml KetoCal 4:1 LQ (Vanilla)
g Mint, fresh
g Lime juice, fresh
ml Vanilla extract, sugar free (HCP added*)
g hoosiel hill farm icing sweetener
g Biscuits, digestive, plain
Directions:
1 zest the lime into a small sauce pan then add the cream, ketocal, fresh mint, sweetener and vanilla simmer on a low heat for 2 minutes
2 juice the lime and to the pan whisk for 1 minute then remove the mint leaves
3 crush the biscuits into a small bowl or jar then top with the cream mixture chill and allow to set for a few hours
