chilled tomato soup

Description: great for summer BBQs lunch boxes
make ahead meal

Ingredients:
 g Spring onions, bulbs and tops, raw
 g Celery, raw
 g Cucumber, raw, flesh and skin
 g Salt
 g Pepper, black
 g Tomato juice
 ml MCT Oil
 g Parsley, fresh
 g Cheese, Parmesan, fresh

Directions:

1 chop all the vegetables into small dice, rip the parsley leaves into small pieces 
2 in a blender wizz the tomato juice and mct oil together 
3 pour into a bowl and top with the chopped vegetables and parsley 
4 sprinkle with grated parmesan cheese 
5 eat hot or cold
