vegan scrambled egg

Description: am easy to make meal and can be frozen and batch cooked

Ingredients:
 g Ackee fruit
 g Tomatoes, cherry, raw
 g Spring onions, bulbs and tops, raw
 g Peppers, capsicum, green, raw
 g Garlic Puree (GIA) (HCP added*)
 g Ground cumin, tesco (HCP added*)
 ml MCT Oil

Directions:

1 chop the ackee, tomatoes, onions, peppers into small dice,
2 heat the mct oil over low heat and add the vegetables ans slowly cook until soften 
3 add the garlic and ground cumin season with salt and pepper and fry for another 2 minutes 
4 serve hot or at room temp
once cold you can freeze 
this can be eaten as a side dish
