Ingredients:
g Mushrooms, white, raw
g Oil, olive
g Peppers, capsicum, green, raw
g Spring onions, bulbs and tops, raw
g Tomato puree
g Tomatoes, canned, whole contents
g Oil, olive
g Water, distilled
g Cauliflower, raw
g Chicken, breast, grilled without skin, meat only
g Curry powder
g Garlic Puree (GIA) (HCP added*)
Directions:
- Add half the oil to a pan and heat gently
- Add chicken, mushrooms, pepper, tomato puree, spring onion and garlic puree and cook on medium heat for 10 minutes
- add chopped tomatoes, curry powder and water and cook for a further 10 minutes on low heat
- Grate the cauliflower
- add remaining oil to a saucepan and once melted, add the cauliflower and sauté for 8-10 minutes
- Serve curry with cauliflower rice to the side
