Salmon Sunday

Description:
Oven baked salmon with savoury rice.
Ingredients:
g Butter, unsalted
g Salmon, farmed, flesh only, baked
g Broccoli, green, boiled in salted water
g Oil, olive
g Cheese, Parmesan, fresh
g Mushrooms, white, raw
g Slim Rice Original (HCP added*)
g Lemon juice, fresh
Directions:
- Base the salmon steak in olive oil, lemon juice, herbs and a small amount of salt.
- Place in tinfoil and bake in the oven for 9 - 12 minutes.
- Take out the oven and set aside (make sure all the juices and oils are kept to be poured over rice/ mushrooms).
- Melt butter in a saucepan over medium heat.
- Add a small amount Gia garlic paste and a small amount of wholegrain mustard.
- Add chopped mushrooms (diced finely) and steamed broccoli chopped finely.
- Cook until soft and browned, add the salmon and pour all the juice over the mushrooms (they will soak up the oil).
- Remove the salmon from the pan and add the Slim rice to dish (amount optional) and stir through to ensure as much of the fat is distributed evenly.
- Add grated parmesan cheese to savoury rice and mix through.
- Ideally to try get even distribution the salmon can be flaked throughout the rice OR salmon could be offered first, followed by rice but keep an eye for the amount of rice eaten as this will be where most of the fat is.
- This recipe is a 2.21:1 with 35g fat, 15g protein, 1g carb, 389kcals per serving.
