2:1 chicken and cauliflower rice - LM 27/11/23

Ingredients:
 g Chicken, dark meat, raw
 g Cauliflower, raw
 g Oil, olive
 g Carrots, old, raw
 g Tomato puree

Directions:

Grate cauliflower to make cauliflower "rice"
Mix tomato puree in some hot water to make a thinner consistency

Heat oil in pan
Once hot, add chopped chicken and fry for a few minutes
Add grated cauliflower and grated carrot along with the tomato puree liquid


Cook till water has evaporated and everything is tender
Serve
