Chicken laksa 2.1 SC
Ingredients:
g Oil, olive
g Onions, raw
g Ginger, ground
g Ground cumin, tesco (HCP added*)
g Coriander leaves, fresh
g Garam masala
g Pumpkin, flesh only, boiled in unsalted water
g Knorr Vegetable Stock Pot (HCP added*)
ml Tesco Coconut Cream (HCP added*)
g Peas, boiled in unsalted water
g Chicken breast, raw (HCP added*)
g Butter, unsalted
Directions:
1. Heat oil and butter in a large non stick frying pan over a low heat.
Cook onoin, stirring until softens.
Add spices, cook stirring about 2 minutes
Add in chicken and stir until cooked
Add pumkin, stir in until cooked
2. Dissolve stock cube in water. Stir stock and coconut cream in with the vegetables, bring to boil.
Reduce heat and simmer, covered for 20 minutes until soft
