mct mushroom and cheese omelet

Description: great for breakfast, dinner or lunch

Ingredients:
 g Mushrooms, white, raw
 g Spring greens, raw
 ml MCT Oil
 g Eggs, chicken, whole, raw
 g Cheese, Cheddar, English

Directions:

1 slice the mushrooms and spring onion,
2 in a small frying pan add the MCT oil and heat over med/low heat, add the mushrooms and onions and fry until soft.
3 whisk the eggs with a folk and season with salt and pepper,
4 add the eggs to the pan covering all the mushrooms, cook until the bottom is set, 
5 sprinkle with the cheese with a fish slice turn the omelet over and cook for 2 minutes until set.
6 serve warm great with side salad for a lunch, dinner or breakfast.
