Description: Satay chicken MKD for HJ 

Ingredients:
 g Garlic, raw
 g Chicken breast, raw (HCP added*)
 g Peanut butter, smooth
 g Butter, unsalted
 g Coconut, desiccated
 ml Cream, double, Tesco (HCP added*)
 g Melon, flesh only, average
 g Eat Water Slim Noodles (HCP added*)
 g Aubergine, raw
 g Courgette, raw
 g Pepper, capsicum, red, raw
 g Carrots, young, raw
 g Oil, olive

Directions:

Satay chicken MKD for HJ 


Chop into thin slices; aubergine, and courgette, peppers and carrots. 


Add vegetables to pan with oil and cook until vegetables are nearly tender. 


Add chicken to pan and cook, cover until tender. Stir in butter and coconut and simmer for 10 minutes. 


Stir through double cream and serve with chopped melon.
