Sunflower Pancake with Raspberry Chia Jam

Description: Nut free pancake

Ingredients:
 g Raspberries, frozen
 g Chia Seeds (Raw Health) (HCP added*)
 g Sunflower seed flour
 ml Egg, beaten (HCP added*)
 ml Fresh double cream tesco (HCP added*)
 g Oil, olive
 g Butter, salted
 g Strawberries, raw

Directions:


Chia Jam: 
150g frozen raspberries in saucepan over low heat until soupy-about 10 minutes. Add 7.5g chia seeds. Continue to cook over low heat about 3 mins. Remove from heat and cool before refrigerating. Use amount from this that will be appropriate for the meal.
Pancakes:1. Mix the egg, sunflower flour, 30ml water and cream.
2. Heat the olive oil in a non-stick frying pan, pour in the mixture and cook until ready to flip, flip and cook until done.
3. Serve with butter, strawberries and chia jam.
