MKD Thai green curry

Ingredients:
g Chicken, dark meat, raw
g Curry paste
g Oil, olive
ml KetoCal 4:1 LQ (Unflavoured)
g Spring onions, bulbs and tops, raw
g Mushrooms, white, raw
g Peppers, capsicum, green, raw
g Creamed coconut, Blue Dragon (HCP added*)
Directions:
1 in a jug whisk the coconut milk, ketocal LQ and 50 MLS of cold water set aside.
2 slice the chicken, mushrooms, spring onion and green pepper into bit size pieces.
3 in a pan heat the olive oil over med/low heat, add the chicken and vegetables and fry for5/8 minutes until the chicken is golden and vegetables has softened.
4 add the curry paste and fry for 2 minutes, season with salt and pepper,
5 add the ketocal mixture and stir to combine, bring to a gentle simmer, cook for 5 minutes.
6 serve with low carb rice or noodles.
