Rosti with zucchini - inspired by Switzerland

Description: Savoury speciality from Switzerland

Ingredients:
 g KetoCal 4:1 Powder (Unflavoured)
 g Zucchini (Patient added*)
 g Potatoes, old, raw, flesh only
 g Cheese, Gouda
 g Oil, rapeseed
 g Locust Bean Gum (Patient added*)
 g Almonds, flaked and ground
 g Salt
 g Pepper, black
 ml Egg, beaten (HCP added*)

Directions:

  1. Weigh all ingredients.
  2. Grate vegetables and Gauda cheese.
  3. Add KetoCal, 18 g rapeseed oil and all other ingredients.
  4. Add seasoning and mix well
  5. Heat 20 g rapeseed oil in a non-stick frying pan and layer mixture evenly in the pan
  6. Heat both sides until golden brown
