Savoury muffin - Matthew's Friends

Description:
Breakfast muffin.
Ingredients:
g Carrots, old, raw
g Butter, unsalted
g Cheese, cheddar (HCP added*)
g Eggs, chicken, whole, raw
g Flaxseed, Linwoods (HCP added*)
g Flour, Self raising (Mcdougalls)
g Almonds, flaked and ground
g Spring onions, bulbs and tops, raw
g Baking powder, carb free, Barkat (HCP added*)
Directions:
1) Start by soaking the Flaxseed in 40ml warm water. Soak for as long as possible (overnight is good).
2) Mash the carrot with the softened butter.
3) Mix the beaten egg, flour flax and chopped spring onion and finely grated cheese into the carrot mash.
4) Mix well.
5) Place in a large muffin mould or two small ones.
6) Cook in preheated oven 190c/170c Fan or Gas 5/6 for approximately 15-20 minutes depending on size.
7) Serve warm or cold.
8) Excellent to batch and freeze.
