Cheese and mushroom omelette - Matthew's Friends

Description: Cheese and mushroom omelette.

Ingredients:
 g Eggs, chicken, whole, raw
 g Mushrooms, white, raw
 g Oil, olive
 ml Milk, Soya, Light, Alpro (HCP added*)
 g Spinach, baby, raw
 g Cream, fresh, double, including Jersey cream
 g Cheese, Cheddar, English
 g Yeo Valley Natural Yogurt (HCP added*)
 g Raspberries, raw

Directions:


1) Heat the oil in a non stick frying pan and fry the mushrooms until soft.
2) Mix the egg with the milk and cream, add seasoning if desired.
3) Pour into your pan, adding sliced mushrooms, spinach and the grated cheese on top.
4) Turn over or finish the omelette top under the grill.
5) Mix the raspberries and yogurt together for dessert.
