KFC for tea!

Description: All of my children love this tea! I swop the courgette fries for sweet potato fries for those prefer.

Ingredients:
 g Chicken, drumsticks, roasted, meat and skin, weighed with bone
 g Almonds, flaked and ground
 g Cheese, Parmesan, fresh
 g Eggs, chicken, whole, raw
 g Mayonnaise, standard, retail
 g Courgette, raw
 g Ghee, butter
 g Broccoli, green, raw
 g Celery, raw

Directions:

Preheat oven to 180 or medium/hot. Place 20g of ghee in a baking tray, this will be for the chicken,  and 10g on another, this will be for the courgette fries, and place in the oven to heat. Add eggs to a bowl, whisk, mix the parmesan and ground almonds together in a bowl, add seasoning and a little smoked paprika to taste. Take the chicken drumsticks or thighs and roll in the eggs until coated then in the almond/cheese mixture. place to one side. Cut the courgette into finger sized potions and repeat with the egg and almond/cheese mixture.  When  the baking tray has warmed, place the chicken and courgette on the trays and place the chicken in the oven for 20 mins, add the courgette for the final 5 mins. Serve with lightly steamed broccoli and celery and a pot of mayonnaise.
