Ginger Parkin

INGREDIENTS:**
ml MCT Oil
g Flour, wheat, white, self raising
g Flaxseed, Linwoods (HCP added*)
g Sweetener, Truvia (HCP added*)
g Ginger, ground
g Eggs, chicken, whole, raw
Directions:
- Preheat oven to 170C/fan 150C/gas mark 3.
- Mix together all dry ingredients, including 1/2 tsp of ground ginger.
- Add egg, then beat in MCT Oil and several drops of sweetener.
- Mix all ingredients together and place in a square or loaf shaped dish.
- Place on baking tray in oven and cook for approx 20 mins or until a skewer comes out clean from parkin.
