Ginger Parkin

INGREDIENTS:**
 ml MCT Oil
 g Flour, wheat, white, self raising
 g Flaxseed, Linwoods (HCP added*)
 g Sweetener, Truvia (HCP added*)
 g Ginger, ground
 g Eggs, chicken, whole, raw

Directions:

  1. Preheat oven to 170C/fan 150C/gas mark 3.
  2. Mix together all dry ingredients, including 1/2 tsp of ground ginger.
  3. Add egg, then beat in MCT Oil and several drops of sweetener.
  4. Mix all ingredients together and place in a square or loaf shaped dish.
  5. Place on baking tray in oven and cook for approx 20 mins or until a skewer comes out clean from parkin.
