vegetable curry (dairy free)

INGREDIENTS:**
g Ackee fruit
g Mushrooms, white, raw
g Onions, raw
g Peppers, capsicum, green, raw
ml MCT Oil
g Turmeric, ground
g Ground cumin, tesco (HCP added*)
g Coriander seeds
g Garlic Puree (GIA) (HCP added*)
g Chilli powder
g Hellman's Vegan Mayonniase (HCP added*)
g Water, distilled
Directions:
1 chop all the vegetable's into bite size pieces
2 in a frying pan heat the mct oil over low heat then add the onions and sprinkle with a pinch of salt to stop them browning to fast cook until soft
3 add the other veg and fry for 5 minutes until tender
4 add the garlic and spices and fry for 2 more minutes stirring well to combine
5 in a small bowl mix the water with the mayonnaise and add to the pan simmer for 2 minutes
6 serve with slim rice
