2.2:1 MCT Chicken curry with cauliflower rice - JO 4/1/2024

INGREDIENTS:**
 g Mushrooms, white, raw
 g Oil, olive
 g Peppers, capsicum, green, raw
 g Spring onions, bulbs and tops, raw
 g Tomato puree
 g Tomatoes, canned, whole contents
 g Oil, olive
 g Water, distilled
 g Cauliflower, raw
 g Chicken, breast, grilled without skin, meat only
 g Curry powder
 g Garlic Puree (GIA) (HCP added*)

Directions:

  1. Add half the oil to a pan and heat gently
  2. Add chicken, mushrooms, pepper, tomato puree, spring onion and garlic puree and cook on medium heat for 10 minutes
  3. add chopped tomatoes, curry powder and water and cook for a further 10 minutes on low heat
  4. Grate the cauliflower 
  5. add remaining oil to a saucepan and once melted, add the cauliflower and sauté for 8-10 minutes
  6. Serve curry with cauliflower rice to the side
