pumpkin bubble and squeak

INGREDIENTS:**
 g Pumpkin, flesh only, boiled in unsalted water
 g Spring onions, bulbs and tops, raw
 g Oil, olive
 g Curly kale, boiled in unsalted water
 g Mushrooms, white, raw

Directions:

1 boil or steam the kale until tender drain and allow to cool slightly 
2 chop the mushrooms and onions and fry in the oil until soft 
3 add the kale and season with salt and pepper 
4 add the mashed pumpkin and stir to combine fry until golden on one side then flip over and brown on the other side
5 serve hot or cool and freeze until needed.
